Otkako je odlučio postati vegan, profesionalne tehnike koje je naučio strasno i beskompromisno koristi kako bi osmislio predivna, inovativna veganska jela. Njegov Instagram profil i youtube kanal @avantgardevegan imaju više od milijun pratitelja i sve su njegove kuharice svjetske uspješnice, a prva Vegan 100 posto, prevedena je i na hrvatski. Gaz je čest gost diljem svijeta, a 2018. na gostovanju u Zagrebu svojim je jelima, ali i osobnošću oduševio i hrvatsku publiku.
